Whilst I was being quite lazy during this summer with big plans and not much motivation, instead of going out for long walks and running to keep in shape, I buried myself in some cooking books and various recipes found on the internet and befriended the saucepans rather than running shoes. It doesn't therefore come to my surprise that I have put on a few pounds. As the summer is coming to an end and the flowery sundresses will soon be replaced by trousers, I figured that it is time to finally start the healthy diet I was meant to start at the beginning of summer.
Well, when is a better time to do it rather than right now? This is why I have planned to make a nice, quick lunch. Two eggs on a bed of spinach and red peppers with a very easy dressing of olive oil and lemon juice. And a few anchovies and parmesan for better taste after I was hugely disappointed by the lack of bacon in our fridge.
It was a delicious lunch accompanied by a glass of orange juice. I would definitely recommend to try it!
